CIDERCON 2025

From 4th to 7th February this year, Chicago hosted at Hilton Hotel a new edition of an event that brought together thousands of producers, distributors, buyers and experts from more than 15 countries and 40 North American states, who participated in talks, tastings, workshops and activities designed to strengthen the global cider industry.

CIDERCON 2025, under the theme “Cider’s Balanced Future: Planet, People, Profit”, brought together speakers from inside and outside the cider industry to show attendees offers and information on how to integrate this triple bottom line approach into their cider business.

On this occasion, the American Cider Association designated Chile as guest of honour, a country that was represented by a delegation organised by the Chilean Cider Collective (COSICHI). The group was made up of prominent producers and experts such as Harriet Nahrwold (Quebrada de Chucao cider maker), René Galindo Quidel (TenCai cider maker) and Gicella Saldivia González (Chilwe Cooperative), among others, also participating in the panel called ‘Exploring History, Flavour and Terroir’.

Each year, Chile produces millions of gallons of cider from forests of heirloom cider apples. Most of this cider is sold under the name “chicha” but a growing movement of new cidermakers have managed to bring cider to the forefront of the Chilean beverage industry. 

Additionally, Chicago Cider Week once again coincided with CiderCon. The week featured fantastic events for cider friends visiting from far and wide, including the long-running Cider Summit Chicago that took place at Navy Pier on Saturday, February 8th. And in between, attendees could visit Chicago’s local cideries Right Bee and Eris.
