WORLD CIDER AWARDS 2025

The World Cider Awards are the global awards selecting the very best internationally recognised cider styles. Their annual tasting selects, awards and promotes the best ciders to consumers and the trade throughout the world. Ciders must be generally available and for sale, which can be on and off trade, local or international.

Los World Cider Awards son los premios mundiales que seleccionan los mejores estilos de sidra reconocidos internacionalmente. Su cata anual selecciona, premia y promociona las mejores sidras entre los consumidores y el sector en todo el mundo. Las sidras deben estar disponibles y a la venta de forma generalizada, ya sea en el comercio minorista o mayorista, a nivel local o internacional.

The Taste categories reflect the styles and processes involved in producing cider as well as the type of apples and pears involved.

Las categorías de sabor reflejan los estilos y procesos implicados en la producción de sidra, así como el tipo de manzanas y peras utilizadas:

FLAVOURED CIDERS AND PERRIES: Flavoured ciders and perries can be still with/without dissolved CO2, light effervescence, or fully sparkling. Sweetness ranges from dry to sweet. Base ciders and perries can be modern or traditional or a blend. Colours vary according to addition. Their characteristics should be apparent alongside flavours and aromas of added ingredients. Hops, fruit, flowers, botanicals and spices can be added. Wood fermented and aged ciders are also included in this category.

• SIDRAS Y PERADAS AROMATIZADAS: Las sidras y peradas aromatizadas pueden ser sin gas, con o sin CO2 disuelto, ligeramente efervescentes o totalmente espumosas. El grado de dulzor varía de seco a dulce. Las sidras y peradas base pueden ser modernas, tradicionales o una mezcla de ambas. Los colores varían según los ingredientes añadidos. Sus características deben ser evidentes junto con los sabores y aromas de los ingredientes añadidos. Se les puede añadir lúpulo, frutas, flores, botánicos y especias. Las sidras fermentadas y envejecidas en madera también se incluyen en esta categoría.

KEEVED CIDER: Keeving is a process whereby not all sugars are fermented, ensuring a degree of natural sweetness. Made traditionally using bittersweet and bittersharp apple varieties. Originally a speciality from the Normandy and Brittany regions of France, often called cidre bouché, now adopted around the world. Colour ranges from light to deep golden. Sparkling or still. Can be lower in alcohol with higher mouthfeel due to residual sugar. Flavours and aromas can include bruised apple, apple crumble, ripe apples, and orange citrus zest. Can be hazy.

• SIDRA KEEVED: El keeving es un proceso mediante el cual no se fermentan todos los azúcares, lo que garantiza un grado de dulzor natural. Se elabora tradicionalmente con variedades de manzana agridulces y amargas. Originalmente era una especialidad de las regiones francesas de Normandía y Bretaña, a menudo llamada cidre bouché, y ahora se ha adoptado en todo el mundo. El color varía de dorado claro a dorado intenso. Espumosa o sin gas. Puede tener un menor contenido alcohólico y una mayor sensación en boca debido al azúcar residual. Los sabores y aromas pueden incluir manzana magullada, crujiente de manzana, manzanas maduras y ralladura de naranja. Puede ser turbia.

ROSÉ CIDER: Due to dissolved CO2, Rosé Cider can be still with/without dissolved CO2, light effervescence, or fully sparkling. Sweetness ranges from dry through medium to sweet. It can be made with red-fleshed apples, red fruits or co-fermentation.

• SIDRA ROSADA: Debido al CO2 disuelto, la sidra rosada puede ser sin gas, con o sin CO2 disuelto, ligeramente efervescente o totalmente espumosa. El dulzor varía de seco a medio o dulce. Se puede elaborar con manzanas de pulpa roja, frutos rojos o cofermentación.

SIDRA NATURAL: Originating in Asturias, this style of natural cider is winning fans further afield. Traditionally produced primarily with sharp and semi-sharp apples using wild rather than cultured yeasts. Traditional sidra natural contains dissolved CO2. Dry and tangy. Some volatile acidity (acetic acid) is part of the style, as can be lactic and phenolic characteristics. Straw yellow to gold colour with green tinge. Fresh citrus, green apple, herbal and floral aromas. Spice and light aged cheese notes possible. Can be cloudy. Poured professionally, quality of sparkle, lacing of glass and length of time foam lasts are all judged.

• SIDRA NATURAL: Originaria de Asturias, este tipo de sidra natural está ganando adeptos más allá de sus fronteras. Se elabora tradicionalmente con manzanas ácidas y semiacidas, utilizando levaduras silvestres en lugar de cultivadas. La sidra natural tradicional contiene CO2 disuelto. Seca y ácida. Parte de su estilo es una cierta acidez volátil (ácido acético), así como características lácticas y fenólicas. Color amarillo pajizo a dorado con matices verdosos. Aromas frescos a cítricos, manzana verde, hierbas y flores. Posibles notas especiadas y a queso curado ligero. Puede ser turbia. Se valora la calidad del espumoso, el encaje en la copa y la duración de la espuma cuando se sirve de forma profesional.

SPARKLING CIDERS AND PERRIES: Made with injection of CO2 prior to bottling or canning. They can be carbonated or naturally sparkling, both modern or traditional.

• SIDRAS Y PERADAS ESPUMOSAS: Elaboradas con inyección de CO2 antes del embotellado o envasado. Pueden ser carbonatadas o espumosas de forma natural, tanto modernas como tradicionales.

SPECIALITY CIDERS AND PERRIES: Still or sparkling. Sweetness ranges from Dry to Sweet. Base ciders and perries can be modern or traditional or a blend. Aromas and flavours should have a discernible cider character. The overall impression must be one of balance. They can be fortified, experimental, co-fermented, with low or no alcohol content and ice ciders and perries.

• SIDRAS Y PERADAS DE ESPECIALIDAD: Sin gas o espumosas. El grado de dulzor varía de seco a dulce. Las sidras y peradas base pueden ser modernas, tradicionales o una mezcla. Los aromas y sabores deben tener un carácter de sidra discernible. La impresión general debe ser de equilibrio. Pueden ser encabezadas, experimentales, cofermentadas, con bajo o nulo contenido alcohólico, así como sidras y peradas de hielo.
